I believe that the most important requirement for good cuisine is to obtain the best and freshest of ingredients.
We are fortunate to be able to catch much of what we eat. King Salmon, Halibut, Spotted Shrimp and Crab make up much of our menu. And the freshest of produce is flown into both Sitka and Juneau each week.
Responding to requests from clients I have put together these recipes of our most popular dishes. It is unlikely that many of you will be able to catch your salmon, halibut, shrimp and crab the same day you serve it. For that you will have to join us in Alaska.
